Scenic run and date night!

I was in the mood for french toast this morning, so I made us Stuffed French Toast.

4 pieces of whole grain bread

2 eggs

1/4 teaspoon vanilla

1/4 teaspoon of cinnamon (I add more cinnamon after I dip the first sandwich because it seems to steal all of the cinnamon.)

splash of milk

Justin’s Chocolate Hazelnut Butter (or whatever you would like to stuff it with…peanut butter, almond butter, nutella, cream cheese and fruit)

It’s very simple but super good.  All you have to do is make 2 sandwiches with the filling inside and dip the sandwiches in the egg mixture and cook in a skillet or use my method of choice, a panini maker.  I topped mine with blueberries and maple syrup.

At noon, I met Frank at the trail for an 8 mile run.

I didn’t keep track of the pace, but I am slowly building up speed with each run.  I felt pretty good for the first 6 miles or so, and then my weird cramp came back…at least it waited a while this time.  I will probably make the next 2 days rest days (meaning I will not rest, but I will not run either).  After the run we stopped at the local bagel joint for bagel sandwiches.  I am a pig and scarfed it down before taking a picture, but I had turkey on an everything bagel with a side of fruit.  Food just tastes better after a good workout. 🙂

I ran into traffic on my drive home, so I took an alternate route.  I thought I knew where I was going but I had to turn on the GPS.  It took me through the middle of nowhere (ya know when you are on those roads that seem like they are the beginning scene of a horror movie?) and I felt silly for needing the GPS when I was really so close to home ;-/.

Tonight, Chris has off work and we have a date with this lovely lady.
