Incorporating cross-training

After breakfast, I headed to the gym for some cross-training.  I wanted to run, but I am considering a last-minute half marathon on Saturday so I wanted to play it safe.

Today’s workout:

30 minutes on the elliptical – level 12

15 minutes on the rower – 3131 meters

15 minutes on the stair climber

10 moving push-ups

15 burpees

30 crunches

15 tricep dips

60 second plank

Tomorrow’s workout will be yoga so that I will be rested if I lose my mind decide to run the half on Saturday.

Tonight’s dinner menu:

turkey burgers (the smoke detector went off during the cooking of these)

sweet potatoes and spinach

salad with romaine, carrots, tomatoes, cucumbers, and avocado with raspberry vinaigrette

and my dad ate every bite…he is finally eating his vegetables!

Back to healthy eating and Overnight Cold Oatmeal

You just can’t have a bad day when you wake up to this face.

I finally made it to the grocery store yesterday afternoon and we now have plenty of healthy foods to choose from.  I do still have this in case of an emergency…

Last night I made Turkey and Spinach Sweet Potato Hash from here.  It was simple to make and very tasty.

I followed dinner with a piece of chocolate chip banana bread from The Fresh Market with strawberries on top.  If you put strawberries on top that makes it healthy, everybody knows that ;).

Before I went to bed last night, I made a batch of Overnight Cold Oatmeal.  I tend to like cold oatmeal once the weather turns warm, and this is easy to make and is ready to go when you get up in the morning.

Overnight Cold Oatmeal – makes 3 to 4 servings

  • 2 cups oats
  • 3 cups vanilla almond milk
  • cinnamon (enough to coat the top)

Pour oats into a storage container and top with milk.  Sprinkle cinnamon over the top to coat the oats.  Cover and put in the refrigerator to set overnight.  The next morning all you have to do is stir and top with your favorite toppings.

I topped mine with strawberries, blackberries, and some cinnamon granola.  It really is so good…I can’t wait to have it again tomorrow morning.

I think tonight’s menu will include turkey burgers and salad…we’ll see if I can get my dad to eat the salad.  🙂

I have no problem eating healthy meals…but I have a hard time resisting dessert.

How often do you grocery shop?

Usually once a week but I’ve been making smaller, more frequent trips recently.
