Happy Birthday Dad and a Special Anniversary!

Today is my Dad’s 61st Birthday! Happy Birthday Big Daddy K (my BFF Lauren gave him this name years ago).

We celebrated his birthday yesterday with a family cookout. Before we could actually grill anything, we needed a functioning grill. I came home (after a 25 mile bike ride) about 3 hours into grill assembly…

I can’t repeat the things he said while putting the grill together, but let’s just say Molly was scared and she hid in the laundry room. Good news, it was eventually finished.

We had chips with guacamole and salsa and peanut m&ms to start. Yes, m&ms are an appetizer.

We cooked hamburgers, turkey burgers, and hot dogs on the grill.

Hamburgers

1 1/2 pounds lean ground beef
1 egg
1 packet dry French onion soup
1/2 cup honey bunches of oats

I know it sounds strange, but they are really good.

On the side we had broccoli salad, baked beans, and sour cream and onion UTZ (I only have these once in a while because I eat the whole bag!).

It wouldn’t be a birthday celebration without cake…ice cream cake! We also had s’mores bars on the side. πŸ™‚

It was a great time and I hope my Dad had a great day.

Not only were we celebrating my Dad’s 61st birthday, but we were also celebrating his 1 year anniversary of bring a non-smoker. He quit cold turkey on his 60th bday and I am so proud of him!
