Stuffed French Toast with Sliced Bananas

Happy Sunday everyone! Even though I ate pizza and a pint of Ben and Jerry’s Half Baked last night, I still woke up hungry and ready for French toast. 🙂

Stuffed French Toast

Ingredients (makes two servings)

4 slices of bread
2 eggs
1/4 teaspoon vanilla extract
1/4 teaspoon cinnamon
Filling (peanut butter, chocolate hazelnut spread, almond butter, cream cheese, etc.)

1. Spread the filling in between two slices of bread. I used chunky peanut butter and Justin’s chocolate hazelnut spread today.

2. Mix together eggs, splash of milk, vanilla, and cinnamon.

3. Dip sandwiches in the egg mixture and place on heated griddle pan. (Note: A panini maker also works great!)

4. Cook until golden brown on both sides.

5. Top with favorite toppings and enjoy!

I topped mine with sliced bananas and maple syrup.

Annabelle decided to wear her breakfast. 🙂

Have a great rest of the weekend!

What did you eat for breakfast today?

  1. Yummy! I had a diet coke and some chocolates…not the breakfast of champions.

  2. I had a bagel!
