Anybody else feel like there just aren’t enough (waking) hours in the day? I’m totally there. I can’t wait for the weekend so I have lots of time to snuggle this little cutie. She got a very important phone call while at the doctor and she just had to take it.
On Sunday, I went through the pantry and put everything I found into the crock pot. This is what I ended up with:
2 frozen chicken breasts
1 can of kidney beans
1 can of black beans
1 can of diced tomatoes
1 bag of frozen edamame
1 cup of chicken broth
1/4 BBQ sauce
1 tsp cumin
1/2 tsp garlic powder
1/2 cup of couscous
1. Put everything in the pot and cook on high for 4 hours.
2. Shred the chicken with a fork.
3. Add couscous, stir, and let sit for 5 minutes.
4. Serve and enjoy!

Tuesday: power tone class and 15 minutes on the elliptical.
Wednesday: 6.3 miles (under an 8 minute pace) and a 3 minute plank.
