My house smells so good.

Annabelle graced us with her presence at 6 o’clock this morning.  It’s so great to start every day (including weekends) before the sun comes up…

Since I knew today was going to be a hang out in pjs kind of day, I decided to fire up the crock pot so that dinner would be ready for tonight.  I didn’t follow a recipe and I just used what I had on hand.

Hot Pepper Jelly Chicken and Veggies

2 chicken breasts

2 sweet potatoes

1 red onion

1 cup carrots

3 cups water or chicken broth (enough to pretty much cover everything)

3 tablespoons hot pepper jelly

1 cup Israeli Cous Cous

1.  Chop sweet potatoes, onion, and carrots and add to the pot.

2.  Add water or chicken broth.

3.  Stir in hot pepper jelly.

4.  Place frozen chicken breasts on top of the veggies.  (I put a little more jelly on top of each piece of chicken.)

5.  Cook on low for 7-8 hours or on high for 3-4 hours.

6.  When there is about 10 minutes left to cook, add the cous cous, stir, and cover.

This crock pot meal smelled AMAZING while cooking.  I decided to add a bit of sweetness to the air and made a batch of chocolate chip banana muffins.  I used this recipe from Janae.

I always add chocolate chips on top before I put them in the oven…I love the way it looks and more chocolate is always a good idea.  🙂

Annabelle (she got a bath this morning and then was put into clean pjs…no need to leave the house when it’s so cold out) was a big help and she has the ice cream scooper all ready for later.

  1. I bet your house smelled hevenly today! I made crockpot chicken and veggies yesterday! Today we went out for Chinese! Did you guys get snow today?

  2. I like to bake cookies but, I rarely do anymore. I end up eating half my weight and dough!
