We had an exciting night.

So, I usually get home between 5 and 5:30 and there is time for us to play outside with Molly until it gets dark. Thanks to daylight savings time, it was very dark at 5:30. :-/ I’m thinking of attaching my blinking tail light from the Ragnar race on Molly’s collar so I can see her running around in the dark.

Dinner was simple, but it hit the spot. I eat a lot of these Perdue Simply Smart Chicken strips lately…it’s just easier to make the same thing for me and Annabelle.

After some playtime and some reading, Annabelle went to bed at 8:30 and I spent some time with Jillian Michaels. Her 30 Day Shred Level 3 is no joke. It’s only 30 minutes long, but it’s a great workout.

After I showered, I sat down to watch some TV. I landed on The Red Band Society…does anybody else watch it? I also consumed a stale brownie because a stale brownie is better than no brownie at all. 🙂

I didn’t feel like blow drying my hair before I went to sleep, so I decided to sleep in braids. Look at my mad braiding skills.

I was hoping for a nice and wavy head of hair in the morning, but that just wasn’t the case. Womp womp.
In other news…

AB was the cutest pretty little pirate ever.



She loves to be like mommy now. It makes my heart melt.

Spinning and running. I haven’t taken spin in a long time and my butt is sore! I wish I could say this run felt easy but it did not. :-/

Meatless Wednesday and eating healthy at work.

So, I didn’t try to make this a meatless Wednesday, but now that I look back on today’s eats, they are sans meat. (Side note: I remember learning what “sans” meant in Mr. Paul’s English class. He was one of my favorite teachers…along with Ms. Bacon.) <——wow, that was quite the tangent. 🙂

Breakfast was leftover pancakes topped with almond butter and agave nectar. The key to eating leftover pancakes is to reheat them in the toaster. You're welcome.


After a very sweaty and grueling x-fit class (lots of squats, jump squats, burpees, wall sits, push ups), I devoured a veggie burger with cheese and carrots and cucumbers on the side. I also had a Greek yogurt.

My snack was a chocolate brownie and oats bar from Trader Joe’s…it hit the spot.

Annabelle was a super good baby tonight and she let me cook dinner without too many interruptions…and no climbing on the tables/couch/chairs. 🙂 I had Minestrone soup and croissants and it was the perfect rainy night meal.

Annabelle wanted her dinner to be featured as well…chicken nuggets and mixed veggies. 🙂

Even though my day was meatless, I don’t believe it will remain ice cream-less. LOL.
Sometimes it can be really difficult to eat healthy at the work place. This is especially true around the holidays. Here are few tips for keeping healthy eating habits at work.

Eating Healthy at Work

1. Pack breakfast, lunch, and snacks. It is so easy and convenient to stop and get breakfast on the way to work or go out for lunch everyday. However, this can deplete your wallet and add to your waistline. Try to pack meals that are high in protein and good fats and that include lots of fruits and veggies.

2. Plan for special occasions. If you are having a work party or a celebratory lunch with coworkers, make sure to plan really healthy meals for the rest of the day and drink lots of water. Make sure to stop eating when you are full and your leftovers can serve as your dinner or the next day’s lunch.

3. Water! Drink lots of water all day long. Sometimes we confuse thirst for hunger and we eat when we aren’t really hungry. Drinking water is also great for your overall health.

Trader Joe’s… I have missed you.

Last night, Annabelle and I had a fun night of eating dinner at Panera Bread and shopping at Trader Joe’s! The nearest TJ’s is over 30 miles from my house, so I don’t go as nearly as often as I would like to.

My goodies!

I bought some normal stuff: bread, eggs, milk, yogurt, honey crisp apples.

I also bought some fun stuff: Ginger Cats Cookies, Chocolate Chip Brownie and Oats Bars, Almond Butter, White Cheddar Mac and Cheese (they had samples and AB loved it), Minestrone Soup, brocollini, and Pecan and Pumpkin Oatmeal.

I also started some Thanksgiving shopping! My extended family (aunts, uncles, cousins, 2nd cousins, etc.) is having dinner on the Saturday before Turkey Day, so if I want dinner on actual Thanksgiving, it’s up to me!

Annabelle was so ready for bed after all of that fun. 😉

Don’t worry, I did manage to fit in a 45 minute Tabata workout today. Fitness Blender on YouTube is my new favorite quick workout to do in my basement. I also washed down all of that chocolate with a healthy lunch. 🙂

“What’s that smell?”

Today’s workout was an intense, sweaty, kick butt class called “Kick It”. The instructor Sean is nuts, but he knows how to teach a good class. This class is a kick boxing class that involves a lot of punching, lunging, high knees, and a killer ab workout at the end. Since this class starts at 12:20 pm, I think about my lunch 100% of the time. 🙂

Today’s lunch was half of a leftover chicken breast with a tiny portion of Mac and cheese (Dora the Explorer :-)) and a zucchini soufflé.

This is made with zucchini and egg whites and I really liked it. The consistency was a little…umm, soft…but the flavor was really good. A few hours later I started smelling something unpleasant, like a BO smell. I kept smelling myself to check that it wasn’t me (and it wasn’t), so I figured somebody was heating something in the microwave. When I got up to use the bathroom, I noticed that the smell was only in my cube. My coworker Kelly verified that the stench was from my cube. Apparently the zucchini soufflé remnants do not smell good after a few hours. :-/

Fast forward through the afternoon and I left work to pick up Annabelle. Our friend Jocelyn (thanks Jocelyn!) watched AB for a little while and she was so worn out that she fell asleep sitting up!

After a trip to the playground we ate chicken salad sandwiches with broccoli salad and grapes on the side. If you have never had a pretzel roll, you are missing out.

Lots of running for me this weekend! I need to fit in a tempo run and a 20-miler. Who wants to join me? 🙂

Does your office have that person who always cooks something smelly? I guess I was that person today…but it used to be my friend Matt.

Pajamas…all day.

Yup, I stayed in my pjs all day today. Did I have a leisurely day of sitting on the couch and watching reality TV? Sadly, no. I was super productive and it feels good to get some much needed housework done.

The morning started with blueberry and banana pancakes followed by multiple loads of laundry, some clutter reorganization, and Annabelle’s first ponytail! She even waited a few minutes before she took it out. Girlfriend does not like anything in her hair. 😦

Lunch was a winner…spinach topped with strawberries, grapes, cucumbers, avocado, and a veggie burger (Dr. Praeger’s).

During Annabelle’s nap, I organized the laundry room and cleaned 2 out of our 3 bathrooms. Chris took a nap too, but he rallied and worked in the garden before AB woke up. 🙂

Dinner rolled around and I made marinated chicken, Mac and cheese, and roasted carrots/asparagus/onions. Annabelle worked on using a fork during dinner and actually used the fork to put some macaroni in her mouth. Unfortunately, she would take it right back out and didn’t eat much of it. Chris and I didn’t let it go to waste.

I finally showered and put on clean pjs after dinner and Annabelle worked on her reading and her photography skills. She took the picture of her plane and asked that I include it in my post. 🙂


Today was a “rest” day, so I am ready for a good ole sweaty speed workout tomorrow!

Healthy eats and no dessert (well, sometimes).

It’s no secret that I love ice cream, cookies, brownies, etc., and I pretty much eat it everyday. While I workout a ton and eat pretty healthy otherwise, this is not a good habit to maintain. Therefore, I’m trying to cut back on dessert and eat healthy foods instead. I made it 3 days last week and then the weekend happened. Oops.

Thanks for the motivation Janae. You are doing great and it motivates me to attempt this very hard task. Kate, we can do this!

So, it seems that I eat healthier overall when I cut out dessert…who knew!

What’s for breakfast?

Overnight oats made with almond milk and cinnamon. Top with berries and enjoy. 🙂

What’s for lunch? Well, usually leftovers from dinner so let’s skip over lunch!

Family Vacation 2014: Ocean City, MD

Last week we spent 5 glorious days in Ocean City, MD. I love the beach and seafood and ice cream, so I was one happy camper. :-).

Getting back on track and she is fearless.

I ate ALOT during marathon training. I was also running ALOT. Now that my workouts are scaled back and I’m not running nearly as much (but having fun doing other things), I really need to get my nutrition back on track. Operation “do not eat ice cream every single night” begins now. 🙂
Yesterday, I worked from home (which is glorious) and headed to the gym during my lunch break.

My workout:

20 minutes elliptical: I varied my speed and intensity throughout and moved between levels 10 and 15. I picked up the pace at the end and did 30 seconds fast alternated with 30 seconds slow.

I changed a few things and did squats and shoulder work in place of the lunges (my knee doesn’t like lunges right now), but I loved this workout as it was quick and got the job done.

I finished off the afternoon with lunch and more work.

Once my workday was complete, my Dad, Annabelle, and I headed to the trail for a walk and some playground time. She is fearless on those slides (very scary for mommy!!!).

It was a great end to the day and she was so ready for bed once the sun went down. 🙂

Memorial Day 2014

I had an emotionally and physically draining weekend, but Annabelle, Poppy, and Mommy had a great holiday yesterday.

After hanging out and doing housework in the morning, Annabelle and I headed to the trail for a run. I didn’t take her out in the jogging stroller during my marathon training (afraid I would hurt something by running different), so it’s nice to be doing it again. However, my knee is still giving me some pain so I ended up doing 8 miles of a run/walk. It is what it is and Annabelle and I enjoyed each other’s company for that hour and a half.

Once dinner rolled around, my dad fired up the grill and we had burgers, corn on the cob, baked beans, and pop chips. Yumm!

Dessert? Why of course I had dessert! I ate a s’mores bar topped with my cool whip/pudding mixture. It was perfect. 🙂

I went to bed counting my blessings and thanking those who have served to protect our country.
