18 miles, baking, chili, and yoga.

The weekend started with a chilly 18 miles on Saturday morning. They were slow easy miles but I felt great the whole time.

The rest of the day was spent eating breakfast and hanging with this little one. She actually took a nap in her crib and this NEVER happens anymore.

I spent Saturday evening with my friends Amber and Justin and their two kiddos. We had a great Shepard’s Pie for dinner and the kids ran around like crazy for a few hours. 🙂

When I got home, I decided to eat a whole bag of popcorn.

On Sunday morning, I made pancakes, eggs, and sweet potatoes. Yum!

A little while later, I decided to make Tina’s pancake cookies. I used regular pancake mix, French vanilla creamer, almond butter, and peanut butter filled chocolate chips. These are really good…even Chris likes them.

I’m not sure what made me want to go, but I went to a late afternoon Bikram yoga class. This was my first class in over a year. It felt AMAZING and I was able to jump right back into proper form, but man is my flexibility gone…and I am sore today. But I can’t wait to go back for more. 🙂

The best way to refuel after 90 minutes of intense yoga = crockpot turkey chili with pumpkin cornbread.

This chili is super easy!

Crockpot Turkey Chili

1. Cook ground turkey and season with salt and pepper and transfer to crockpot.
2. Chop one onion, one green pepper, one red pepper, and one orange pepper and add to crockpot.
3. Add one can of black beans and one can of white kidney beans to crockpot.
4. Add one packet of chili seasoning.
5. Add enough vegetable stock to cover the veggies, beans, and turkey.
6. Stir and cook on high for 4:30 hours.
7. When there is 10 minutes left of cooking time, add a 1/2 cup of cous cous and stir and recover.
8. Serve with cheese, sour cream, and cornbread. 🙂

A Sunday night is not complete without watching Homeland and The Affair with lots of ice cream.

Trail running and a 50k.

Last Saturday morning, Jeanette and I headed out for a long trail run (on real trails with trees, roots, rocks, streams, etc.) Why are we trail running when we usually stick to roads and flat and easy trails? Well, since we just trained for a marathon and we are in decent shape (we think), we decided to go big and sign up for a 50k trail race! Therefore, one should actually run some trails prior to running over 30 miles on them and we will be trail running for the next few weeks.

Rosaryville 50k on July 20, 2014. This is my 32nd birthday and I can’t think of anything better than running 32 miles with a great friend. 🙂

It was really fun and a big change from road running. With about 2 miles to go, I tripped and landed hard. Thankfully I caught myself with my knees and my left shoulder and I only landed on dirt (no rocks, thankfully). At least I got the whole tripping and falling thing out of the way. 🙂

One of many great things about running with Jeanette is that her husband makes us breakfast. Blueberry pancakes and eggs straight from the backyard.

I also went home with a jar of homemade strawberry jam and homemade applesauce. Yum!

When you can’t run, shovel!

Since I ate a delicious chocolate donut pretty early this morning, I was ready for second breakfast around 10:30. I made us eggs, potatoes with onions, and bagels. 🙂

Since I obviously couldn’t go out for a run, I decided that shoveling (about 15 inches of snow) would be a great workout.

In a little over 2 hours, I had shoveled out our front sidewalk, driveway, and some of our outer sidewalks. I didn’t shovel out the back of our driveway because it made more sense to wait for the plow to come through first.

I was pretty hungry when I got back inside, so I snacked on yogurt with sliced banana and cinnamon granola.

A little while later I went back out and shoveled out the last part of the driveway. Total shoveling time = 3 hours! I wonder how many calories I burned? Enough to have a huge bowl of ice cream? I believe so! FYI…Chris offered to shovel and would have done so, but I insisted on doing it. 🙂

After shoveling round 2, I was so ready for a shower and dinner. While our pizza was cooking, Annabelle and I snacked on some animal crackers. I just can’t eat one. They are just too good.

Yesterday was a pretty awesome day. Any day that starts like this is ok in my book.

We had our annual office Christmas breakfast and I enjoyed 2 blueberry pancakes, 1 chocolate chip pancake, eggs with cheese, potatoes, turkey bacon, and fruit! It was so good.

After breakfast, we played a “Greedy Santa” game.

I picked number 20 out of 23 and I felt really confident when I stole a really nice movie watching prize pack from a supervisor. 🙂 Unfortunately, he stole it back in a later round and I ended up with this.

I LOVE chocolate so I’m totally ok with this. However, I do not like coconut so I gave those away to my coworkers.

After eating my weight in pancakes, I headed to the gym and ran 7 miles on the treadmill. I finished in 60 minutes and ran the majority of the time at an 8:30 pace. I ended my workout with a 3 minute plank…and a gym selfie. 🙂
