All Aboard the (mostly) Healthy Train.

I was SUPER sore after the HAT 50k and I pretty much sat on my behind and ate for an entire week straight.  I know that my body needed a rest and it was nice to not have the “pressure” of fitting in a daily workout.  I also decided to just let go and eat whatever I wanted for a week.  This mostly meant that I snacked on candy and other treats and ate a few meals that I normally wouldn’t (like a chicken sandwich and fries from Chic Fil A).  So, after a week of pretty much doing no activity and eating a bunch of crap food, I was more than ready to get back on the healthy train.

Here are some of the meals I ate to get back on track!

  • I actually meal prepped on a Sunday and made enough chicken and veggies for lunches for the week.  It was really nice to just reach in the fridge and grab a container and be on my way.

 

  • I also made a batch of “egg muffins”.  Egg muffins are pretty simple…

  


1.  Sautee spinach and a clove of garlic in coconut oil.

2.  Add a spoonful of spinach into the bottom of each muffin.

3.  Spinkle mozzarella cheese on top of the spinach.

4.  Mix together 4 eggs and 2 egg whites, season with salt and pepper, and pour on top of the spinach and cheese.

5.  Bake until set.  🙂

  • Love Grown Oats Power O’s .  This cereal is made with beans!  While they don’t taste like Honey Nut Cheerios, they still taste pretty good!

 

  •  Sweet potato (cover in coconut oil, wrap in tin foil, and bake until soft…thanks for the tip Janae) topped with turkey, mixed veggies, and cheese.

 

  • Chobani Greek Yogurt with Oats

 

  • Ground turkey (cooked with some onion, garlic, and taco seasoning) tacos topped with black beans, cheese, and tomatoes.

 

  • Mahi Mahi with green beans…and a french baguette from Panera Bread (it would just be wrong to let it go to waste!)

 

  • Turkey, string cheese, and raw veggies (carrots, cucumber, and tomato)

I actually went a full 4.75 days without dessert or any other after dinner treats.  I treated myself with fro yo on Friday night and then my healthy train fell off a cliff on Saturday evening through Sunday.  What did this train wreck look like?  It looked like french toast and bacon, robin’s eggs, fish tacos, sangria, Cadbury Mini Eggs, cookies, ice cream, and popcorn.  Wow, that was just gross.  It looks like I have two speeds….uber healthy or just sit me in a pool of chocolate, cookies, and candy.  Something to work on in the future…

Happy Easter!

I spent the morning with 40 other yogis at Bikram yoga class.  Since I sweat off about 5 pounds this morning, I will not feel bad about the bag of Cadbury Mini Eggs I’m about to consume.

Daddy dressed Annabelle while I was gone.  If he dresses her, you can be sure she will be wearing Orioles or Ravens gear.

We all got pretty and headed to dinner with my parents and my cousin Carrie (also known as AB’s Aunt CK).

Chris seems to have been sporting a semi-mohawk today :).

My parents bought Annabelle a big stuffed duck for Easter and AB enjoyed using it as a pillow enough time for me to get a good picture.

Absolutely!  Daddy did a great job picking out her dress, sweater, and socks.  He went to Gymboree and didn’t look at the price tags…needless to say he was floored when he got to the register.  She will be wearing this weekly until it no longer fits.

 

Sleep deprived but the show must go on…and I must eat!

Annabelle had a rough day yesterday and she was awake ALL DAY LONG!  She decided that 2 am was a good time to finally go to sleep and Chris and I were beyond exhausted.  She slept until 7:30 and once she was fed and fell back to sleep, I decided to just suck it up and stay awake and go to the 9:30 yoga class.  Once class was over, I was very glad that I decided to go.

I was starving when I got home (as usual), so I made a turkey and Laughing Cow Garlic and Herb cheese panini sandwich.  I had some pita chips and guacamole on the side.

Chris and I spent the afternoon trying to get the house presentable for John and Emmy’s wedding party this weekend.  We are also trying to get the house suitable for John, Emmy, and the girls since they are staying with us for a week!  Annabelle helped us out by actually taking some naps today.  We of course are not charging them to stay with us, but they can show their appreciation by taking on night-time baby duty.  🙂

My dad came up to hang out with AB tonight and I snuck in a 45 minute nap. It was glorious!  After my cat nap, I made Cheesy Garlic and Herb Brussels Sprouts with Sausage and it was super tasty and really quick to make.  My dad, who is a chicken fingers and fries kind of guy, even had a few servings of this meal.

I wanted something sweet after dinner, which is a nightly occurence, so my dad and I snacked on some of these while we watched the new show “Splash”.  I could easily eat the whole bag in a sitting…

Insanity is working!

I am finally fitting back into non-maternity pants!  Ok, so they are my “big” pants and I still can’t fit into some of my jeans, but I am seeing results and I definitely feel more toned.  Chris is also seeing the benefits too.  His clothing is already fitting better and people at work are mentioning that he looks slimmer.  The more we do it, the harder it gets.  I guess since we are getting better at the exercises, we are able to have better form and work harder.  We are loving it!

My friend Amber and her baby Bennett (Annabelle’s boyfriend) came over to hang out today.  Since our maternity leave overlaps, we have been getting together for weekly baby play dates :).

We ordered lunch from a local pizza place but we were behaving and didn’t get pizza.  I had turkey in a wheat wrap with multigrain pita chips.

Annabelle was really sad when it was time for them to leave.

My mom came over to hang out with us tonight.  She absolutely adores AB and never wants to put her down. For dinner, I made us Trader Joe’s Sweet Potato Gnocchi with broccoli and cauliflower.
