I love Mondays at home.

My work schedule allows for me to be off every other Monday and it is great. Even better is that we have been off because of snow the past two Mondays I was supposed to work. Win win situation. 🙂

I LOVE making breakfast at home, so the day started with stuffed French toast. I finally found The Laughing Cow’s Cinnamon Cream Cheese spread and it made for the perfect filling.

Since the road conditions were not great for running, I headed to the gym for this week’s tempo workout.

1 mile warmup at 9:13 pace
4 mile tempo at 7:35 pace
1 mile cool down at 8:34 pace

I’m not going to lie, this felt TOUGH. My legs were still pretty tired from my long run and it took me about a half of a mile to stop feeling like I couldn’t keep up with the belt on the treadmill.

I finished the workout with a 3 minute plank and a few side planks. Pro compression socks and capris make for the perfect outfit. 🙂

Since I food prepped on Sunday, I ate the lunch I had packed to take to work yesterday.

I REALLY wanted some Cadbury Mini Eggs for dessert, but I controlled myself and had a banana cream yogurt with chocolate goldfish mixed in instead.

The rest of the day was spent doing house stuff and playing with this little stinker. 🙂

My mom came up to hang out with us once Chris went to work. Annabelle LOVES her grandparents. I made grilled chicken salads for dinner and it felt good to eat lots of veggies before I consumed a boat load of ice cream.

Tired legs, french toast, and leftovers.

Come Sunday morning, my legs were shot. From body pump on Thursday, x-fit class on Friday and prepping for and hosting Annabelle’s birthday party on Saturday, my legs were very sore and tired. What’s the best therapy for tired legs? Go out for a long run!

Jeanette and I met for an 8 am “race” on Sunday morning. Our local running club hosts weekly Sunday runs and they map out a course and time everyone, but it’s not a big organized race. They are a fun group of people and it’s great to run somewhere new each week.

This is everyone before the race started. It was cold and windy and you can see how happy I looked. 🙂

The run was 6.5 miles through beautiful back country roads. The course was great until we got to a hill that went straight up…for about a quarter mile. I’m pretty sure I could have walked up it faster than I was running it. I managed to push through by using my friend Janae’s mantra, “I can do hard things.” I finished in 50:05, first place female! Jeanette finished a little bit later and was second place female. 🙂 Even though our legs were fatigued from the hilly course, we headed back out and ran it again. We took it slow this time, and ran between 8:30 to 9:00 miles. 13 miles before 10 am = awesome.

What’s even more awesome than a 13 mile run? A 13 mile run followed by French toast and bacon!

When AB finally napped, we all napped. I needed a nap in a bad way and she did too. Poor thing had a bad cold and a fever :-(. The rest of the night was spent eating leftovers (cream cheese chicken chili) and fro yo while watching the movie Argo. 🙂

A Run, A Brunch, and a BBQ

Yesterday was a great day for a run…sunny, breezy, and cool. I am happy to report that I didn’t feel any major pains and I am still feeling good today.

I was thinking about this French toast for my entire run. We have decided that brunch at Juliana’s is a new Sunday tradition.

After suffering through another horrible O’s loss, we headed to Nick and Kim’s house for a smokin BBQ. We enjoyed a variety of smoked meat, pasta salads, fruit, and desserts. It was a great evening of friends and food :-).

After breakfast, my SIL Emmy and I went to the gym.  We had to get in a good workout to compensate for the gigantic dinner we were going to eat.

40 minutes on the elliptical at level 12

Rowing machine on level 10 – 4 intervals:  2000 meters, 1500 meters, 1000 meters, 500 meters=5068 meters in a little over 25 minutes

I ended with a one mile run on the hill setting for a quick 100 calorie burn.  I left the gym sweaty and happy :).

When we got home we prepped Annabelle for her photo shoot.  Emmy, who takes awesome pictures, was nice enough to take some shots of baby AB for us.  Here is a little sneak peek…

We went to dinner at one of our favorite places ever…Friendly Farms.  Before you are seated, you order your main course…crab cake, shrimp, fried chicken, steak, etc.  Once you sit down, you are given appetizers such as cottage cheese, warm apples, cole slaw, apple butter, and rolls.  When your main course comes, you are given french fries, corn, and green beans.  Everything is served family style and you can get as much as you want :).

I ordered the crab cake and fried shrimp platter and it is sooo good.  Also, check out that roll…it is fried dough covered in sugar and I could eat them all day long.

Dinner was followed by ice cream…but they don’t let you have as much as you want :(.  The moose tracks is by far the best flavor and I ate it too quickly to even think about a picture.  Morgan and I were twins in our American Eagle sweatshirts.  We are trying to make matching cool again.

Scenic run and date night!

I was in the mood for french toast this morning, so I made us Stuffed French Toast.

4 pieces of whole grain bread

2 eggs

1/4 teaspoon vanilla

1/4 teaspoon of cinnamon (I add more cinnamon after I dip the first sandwich because it seems to steal all of the cinnamon.)

splash of milk

Justin’s Chocolate Hazelnut Butter (or whatever you would like to stuff it with…peanut butter, almond butter, nutella, cream cheese and fruit)

It’s very simple but super good.  All you have to do is make 2 sandwiches with the filling inside and dip the sandwiches in the egg mixture and cook in a skillet or use my method of choice, a panini maker.  I topped mine with blueberries and maple syrup.

At noon, I met Frank at the trail for an 8 mile run.

I didn’t keep track of the pace, but I am slowly building up speed with each run.  I felt pretty good for the first 6 miles or so, and then my weird cramp came back…at least it waited a while this time.  I will probably make the next 2 days rest days (meaning I will not rest, but I will not run either).  After the run we stopped at the local bagel joint for bagel sandwiches.  I am a pig and scarfed it down before taking a picture, but I had turkey on an everything bagel with a side of fruit.  Food just tastes better after a good workout. 🙂

I ran into traffic on my drive home, so I took an alternate route.  I thought I knew where I was going but I had to turn on the GPS.  It took me through the middle of nowhere (ya know when you are on those roads that seem like they are the beginning scene of a horror movie?) and I felt silly for needing the GPS when I was really so close to home ;-/.

Tonight, Chris has off work and we have a date with this lovely lady.
