It’s been a super long time since I’ve posted. To my loyal readers (Rob, Mom, Dad, and Aunt Janice), I am sorry. πŸ˜‰  In case you are new here, my name is Linda and I love my family, running, and ice cream. This weekend was a good one filled with lots my favorite things…

Running!  16 miles on Saturday morning. Jeanette and I averaged a 9 minute pace and it was awesome. 

Napping!  Saturday afternoon nap with my favorite little girl. 

   
 

Ice cream!  This was my first time trying this brand. I planned on just having a few bites. A few bites = the whole pint. 

  
Snacks!  I’ve been on a serious popcorn kick lately.  Ya know, I need the salty to balance out the sweet. 

  
Family fun day!  I bought Chris super good tickets to the Oriole’s game for Father’s Day. We had such a good time.

Now that I’ve watched Big Brother (anybody else love this show), ate my weight in ice cream, and stayed up way too late, I NEED to go to bed. I woke up with a weird hip/butt/IT band issue going on and really really really hope it starts feeling better tomorrow. Please cross your fingers and toes for me.

Last night, Annabelle and I ate dinner, I gave her a bath, and she was asleep before 8:30. Since I didn’t have time to workout earlier in the day, I went to the basement and did a Fitness Blender workout on YouTube while watching some Biggest Loser.

The workout was only about 35 minutes but it was a good one. It used the ladder structure and included lots of burpees, push ups, high knees, squats, mountain climbers, and abs.

When I got back upstairs, I remembered that I had the bright idea to make these babies after dinner.

So yea, my post workout snack was a brownie topped with ice cream…

Meatless Wednesday and eating healthy at work.

So, I didn’t try to make this a meatless Wednesday, but now that I look back on today’s eats, they are sans meat. (Side note: I remember learning what “sans” meant in Mr. Paul’s English class. He was one of my favorite teachers…along with Ms. Bacon.) <——wow, that was quite the tangent. πŸ™‚

Breakfast was leftover pancakes topped with almond butter and agave nectar. The key to eating leftover pancakes is to reheat them in the toaster. You're welcome.

After a very sweaty and grueling x-fit class (lots of squats, jump squats, burpees, wall sits, push ups), I devoured a veggie burger with cheese and carrots and cucumbers on the side. I also had a Greek yogurt.

My snack was a chocolate brownie and oats bar from Trader Joe’s…it hit the spot.

Annabelle was a super good baby tonight and she let me cook dinner without too many interruptions…and no climbing on the tables/couch/chairs. πŸ™‚ I had Minestrone soup and croissants and it was the perfect rainy night meal.

Even though my day was meatless, I don’t believe it will remain ice cream-less. LOL.

Sometimes it can be really difficult to eat healthy at the work place. This is especially true around the holidays. Here are few tips for keeping healthy eating habits at work.

Eating Healthy at Work

1. Pack breakfast, lunch, and snacks. It is so easy and convenient to stop and get breakfast on the way to work or go out for lunch everyday. However, this can deplete your wallet and add to your waistline. Try to pack meals that are high in protein and good fats and that include lots of fruits and veggies.

2. Plan for special occasions. If you are having a work party or a celebratory lunch with coworkers, make sure to plan really healthy meals for the rest of the day and drink lots of water. Make sure to stop eating when you are full and your leftovers can serve as your dinner or the next day’s lunch.

3. Water! Drink lots of water all day long. Sometimes we confuse thirst for hunger and we eat when we aren’t really hungry. Drinking water is also great for your overall health.

Hey there! I’ve been MIA for a while (partly because I’ve been super busy and partly because I don’t have a computer right now) and I know at least 3 people have been missing my daily nonsense. Hi mom, dad, and Rob. πŸ™‚

So, here’s what’s been happening.

1. I ran my second Ragnar Relay and it was AWESOME. My teammates are super fun and I’m so grateful to have been part of the team for a second year. I was runner number 6 and completed 23.3 miles during the race.

We placed 24th out of 369 teams!

2. I did not get into Boston. Even though I qualified, I was not accepted due to the large number of applications. This was a hard pill to swallow. 😦

3. We are enjoying Fall! This was a fun afternoon spent at a local farm. πŸ™‚

4. I am trying out the Glycerin 12s and I love them so far. I usually stick with the Pure Flows but I wanted something with a little more cushion for now. Annabelle loves to stick her hand up to give me high fives when we are running with he jogging stroller. πŸ™‚

5. My cousin Carrie and I went to Cedar Point last weekend and it was such a blast. If you like roller coasters and scary stuff, Cedar Point in the Fall is the place to be.

When life gives you lemons…

…Eat lots of ice cream. So, I had a hot fudge sundae 2 out of the last 3 nights. I’ll try harder tomorrow… I did enjoy my “healthy” angel food cake dessert last night.

I haven’t been running too much lately (my silly left knee is still being a jerk), but I did get in 7 decent miles on Sunday.

I have been keeping up with strength training and cross-training cardio in the mean time. Here is an awkwardly horrible post 30 minute elliptical plus 20 minute stair master workout selfie.

Expired snacks, I wanted to quit, and my new strategy.

So when I woke up yesterday, I felt terrible. My stomach was all messed up (maybe it was the Starbucks and Easter candy at 9 pm), and I just felt blah. I decided a nice healthy breakfast would fix everything, so I raided my stash at work and found this bar.

I’m glad I noticed the “best by date” of June 2013 before I ate it. Don’t worry, I did end up finding a non-expired Clif bar and did not go hungry. πŸ™‚

Wednesday has been “track day” for a while now, so of course it was chilly and very windy for our workout. This workout was a killer and I wanted to quit so many times.

8 x 800m in 3:17 with a 1:30 RI (rest interval) between sets. We ended up running each 800m in about 3:14-3:15 and I really had to channel my inner Shalane and remember that Bart Yasso (Yasso 800s) is one of my BFFs. πŸ™‚

Since I’m trying to cut back on my ice cream consumption, I used one of Annabelle’s bowls AND the ice cream was “light”. Even though the bowl doesn’t look that small in the picture, it’s much smaller than my usual mixing bowl.

“Homemade” Pizza with a Twist

Hey guys!Β  I think I’ve finally found my way of cooking.Β  I am not very good at making things from scratch and I really can’t figure out how much of an item to add unless someone else tells me to.Β  I take the “semi-homemade” approach just like Sandra Lee.

Last night, I made this very tasty pizza for dinner and even my dad liked it.Β  He is more of a pepperoni pizza type of guy. πŸ™‚

“Homemade” Pizza with a Twist

1 store bought pizza dough

1 package of ground turkey (I only used 3/4 of the meat and saved the rest.)

1 jar of salsa

1 handful of spinach

1/4 of a small red onion

3/4 cup of shredded mozzarella cheese

***NOTE:Β  These “measurements” are all estimates because I just went off of feel.Β  Please add as much of each topping as you would like.Β  πŸ™‚

1.Β  Cook ground turkey in a skillet and season to taste.Β  I just used salt and pepper.

2.Β  In the meantime, pre-cook the pizza dough if it calls for it.Β  The dough I used was pre-cooked for 8 minutes before adding the toppings.

3.Β  Spread salsa on the crust to serve as the sauce.Β  I used the whole jar.

4.Β  Add cheese, ground turkey, onions, spinach, and a little more cheese!

5.Β  Bake until cooked and enjoy!Β  I baked mine for about 8 minutes.

FACT:Β  The best way to end a healthy pizza night with the family is to watch Dance Moms and eat a huge bowl of ice cream (bottom layer = cookies and cream, middle layer = double fudge brownie, top layer = strawberry waffle cone…topped with chocolate sauce and cool whip).

Weekend Recap!

Happy Monday!Β  I hope you all had a fun and relaxing weekend.Β  My weekend was great, but it went by way too fast as usual.

My alarm went off before the crack of dawn on Saturday morning…5:30 am!Β  Even though it was super early for a Saturday morning, it’s always easier to get up when I know I have a long run with a good friend coming up.Β  I met Jeanette at 7 am and we headed out for our scheduled 18 miler.Β  Since we weren’t quite back to our starting point when we hit 18, we kept going and finished with a little over 19 miles for the day.Β  πŸ™‚

What makes a great 19 mile run on a beautiful Saturday morning even better?Β  Chocolate chip waffles in farm shapes and fresh eggs and fruit.Β  Thank you Todd!

On Sunday, we actually slept in because Annabelle didn’t get up until 8 am!Β  Wow, was that needed.Β  Thanks AB.Β  Once we got moving, we went to a late breakfast and then went grocery shopping.Β  I always get in a grumpy mood on Sundays because I finally look around the house and see everything that should get done.Β  (FYI I don’t do much of anything but eat on Saturdays because you shouldn’t have to do housework on long run days right?)Β  I always feel better once I cross a few things off of the to-do list, so here is what I got accomplished once I got Annabelle down for a nap.

  • washed our sheets
  • a few loads of laundry
  • organized our shoe/coat closet (I’m too embarrassed to show a before pic.)

  • Food prepped for the week – I made sweet potatoes, broccoli, and chicken and split into portions to take to work for lunch.

The rest of the night was spent chasing around AB (who is walking like a champ and NEVER stops moving!) and eating pizza and ice cream.Β  I tried a new flavor and since the base flavor was strawberry, it counts as a serving of fruit.Β  πŸ™‚
