Chipotle Night!

Today was a normal Wednesday in the life of a working mama. I got up at 6:00 (after snoozing a few too many times), showered, and headed to my happy place before heading to work. My happy place = Starbucks. I tried the new Tiramasu Latte with nonfat milk and whipped cream. It was good, but I will probably stick to my normal choices.

After my lovely 1 1/2 hour commute, I checked my email and dug into my overnight oats. I haven’t made this in a long time and it was well overdue.


I worked for a few more hours, answered a dozen of phone calls, and got hung up on once. It was nice little morning. Around noon, Jeanette and I headed outside for a glorious 6.83 mile run. While we had to dodge some snow and ice covered roads and sidewalks, the sun was shining and the temps were balmy (30 degrees!).


Lunch was leftovers from last night’s dinner. I think it actually tasted better today than it did last night. Spoiler alert: This will be my lunch tomorrow too. I also had a Yoplait Greek Whipped Yogurt and it was a nice change from the traditional kind.



While I was slaving away at work, my mom sent me this beauty. How rude! 🙂

My afternoon snack was a banana with a side of almond butter on plates leftover from my baby shower over 2 years ago. I should really quit my day job to be a food photographer.


Dinner was you guessed, Chipotle! Ever since Chris has been off work on Wednesday nights, I’ve been picking up Chipotle for dinner. I’m always excited to eat it, but man does it feel like a rock in my stomach now.


We usually end Chipotle night with fro yo, but it’s going on 9 pm now and they close in a few minutes. Looks like I will have to settle for something from my stash while Chris and I watch some Law and Order: SUV (you Sopranos fans out there will know why we call it SUV instead of SVU). What to choose?? Red velvet oreos, white fudge oreos, Reese’s Hearts, peanut M&Ms, Hershey’s Hugs. I do have ice cream in the fridge, but that is the last thing I ate before I got sick on Saturday night and I may never eat that ice cream again.

Meal “planning” and a new favorite salad dressing.

Do you meal plan? I don’t really do much planning. I go to the grocery store and tend to buy enough food for a week and make whatever strikes my fancy each day. I usually stick with the same meals for a while and then move onto something new.

The most planning I do is packing breakfast, lunch, and snacks the night before work days. Depending on what I decide to bring, this task can take a long time…cutting fruit and veggies, making overnight oats or sandwiches, portioning out leftovers, etc. One of the many benefits of working from home a few days a week, is not having to make a days worth of meals the night before. It really does take a lot of stress off of my nightly routine.
Today’s eats!

Pancakes with bananas and blueberries (same exact breakfast as yesterday)

Chicken, veggies, and Mac and cheese leftovers (with a half of a sweet potato added in)

A big salad with spinach, grapes, strawberries, cucumbers, avocado, and a veggie burger. I also discovered this awesome new salad dressing…salsa ranch made with yogurt! It tastes amazing.

I also discovered these beauties. Try them ASAP.

Speed work…which I love and hate at the same time. Hate during and love afterwards 🙂

Healthy eats and no dessert (well, sometimes).

It’s no secret that I love ice cream, cookies, brownies, etc., and I pretty much eat it everyday. While I workout a ton and eat pretty healthy otherwise, this is not a good habit to maintain. Therefore, I’m trying to cut back on dessert and eat healthy foods instead. I made it 3 days last week and then the weekend happened. Oops.

Thanks for the motivation Janae. You are doing great and it motivates me to attempt this very hard task. Kate, we can do this!

So, it seems that I eat healthier overall when I cut out dessert…who knew!

What’s for breakfast?

Overnight oats made with almond milk and cinnamon. Top with berries and enjoy. 🙂

Note: I get to work at the butt crack of dawn and always start the morning with coffee.

What’s for lunch? Well, usually leftovers from dinner so let’s skip over lunch!

Veggie burgers topped with guacamole/avocado and tomatoes with veggies on the side.



Garlic pepper marinated chicken with veggies. This meal makes amazing leftovers.

Fruit, nuts, yogurt, cottage cheese, etc. Tonight I tried the grapes and cottage cheese combo and I was pleasantly surprised.

A pretty cool thing to do.

I had big plans to get up super early yesterday morning and head to the gym. Annabelle decided to party from 2 – 3:30 am, so I slept through my gym alarm clock and still felt pretty lousy when my work alarm clock went off. Some days, sleep wins.

Once I got to work, I ate my overnight oatmeal. I am hooked on this breakfast and have eaten it every work day for at least 2 weeks.


During lunch, I went to a farewell gathering for a friend who is moving cross country. He and his wife decided that they wanted a change and they are taking 2 weeks to drive across the country and start a new life near Seattle. How cool is that?

The rest of the afternoon was spent working with my headphones in. Sometimes you just need to tune the office out. I love the Pandora pitch perfect station.

At the last minute, I decided to join my friend Gina for a kettle bell circuit class at our work gym. It was a fun class and we did a bunch of different exercises (squats, swings, curls, overhead presses, more squats, tricep dips) using the kettle bells. I worked up a good sweat and I ended my workout with 15 minutes on the stationary bike.

I made another quick and healthy dinner tonight and I was really looking forward to it because I LOVE sweet potato tots. I sautéed red onions and spinach and added Nature’s Promise Sun Dried Tomato Chicken Meatballs. Served with sweet potato tots on the side, it was the perfect meal.

The night ended with Honey Boo Boo and…ice cream. I think I need an intervention. 🙂

Healthy Eats = Fast Feet

Many things go into being a high performing athlete (“high performance” will be different for everybody), but eating a well-balanced diet is high on the list. I am a pretty healthy eater (excluding dessert) and I really notice that my body feels different when my diet lacks proper nutrients.

I’m on an overnight oats kick right now…

1/2 cup of oatmeal
1 cup of almond milk
Top with cinnamon
Store in the fridge overnight.

Before eating, add granola, nuts, fruit, etc. Enjoy!

For lunch, I’ve been having veggies and grilled chicken drizzled with some honey Dijon dressing.

My dinner last night was so good…ok, it looks gross so I’ll delete the picture, but it was super tasty. It was white long grain rice topped with black bean and vegetable soup topped with guacamole. 🙂

Let’s just pretend I don’t end every night like this.

Today’s track workout felt pretty good and I know that my healthy oatmeal breakfast helped my legs move faster. 🙂


I cut the RI (rest intervals) short and finished in about an hour. For each 400 (quarter of a mile) I ran at an 8.9 (6:44 per mile) speed on the treadmill. My 2 warm up miles were at an 8:35 pace and my cool down mile was at an 8:00 pace.

It feels good to have the tempo and speed runs done for the week and now just easy runs and the long run are left. 18 miles scheduled for Saturday morning!

If you don’t take Body Pump regularly…

you will be sore every time. I took a class during lunch yesterday and my inner thighs and my chest/arms are really feeling it today. I definitely challenge myself each time and if I don’t go on a consistent basis, I am sore for days! In order to help my running and my overall strength, I’m trying to take classes twice a week from now on. 🙂
Rewind to breakfast yesterday. I had overnight oats with sliced bananas. You can make overnight oats a ton of different ways, but this is what I do.

Overnight Oats

1. Pour 1/2 cup of oatmeal into a container.
2. Add 1 cup of vanilla almond milk.
3. Sprinkle cinnamon on top.
4. Cover and leave in fridge overnight.
5. Add fruit and granola in the morning and enjoy!

I was famished by the time Body Pump was over (anybody else get super hungry after weight training?). I ate an almond butter and strawberry jam sandwich and a blueberry Chobani.


Later in the afternoon I snacked on two clementines and I ate yogurt covered raisins on my drive home from work. Snacks make the commute so much better!

On the way home I picked up Subway for dinner. I went with a turkey and ham salad and I had some pita chips on the side.

Annabelle finally fell asleep around 9:30 and I ate some “healthy” dessert while watching Dance Moms. Lucky for me she woke up right as I was getting into bed. Good thing she is so darn cute. 🙂

Two workouts are always better than one!

Getting up this morning was a struggle, but I managed to only leave 10 minutes later than usual…5:55 this morning.  Yes, it is brutal.  Once I got on the highway I was greeted by this…


Just in case you didn’t notice…that says 0 mph (meaning it was safe for me to take this picture because I was at a complete stop).  I’m happy to report that this traffic was not due to an accident…it was construction.

I happily fit in two workouts today :).  I took a body pump class during lunch…

…and hit the gym after work.


As always, I never regret a workout and 2 workouts are always better than just 1!

As always, the best part of my day was coming home to AB.


She was super happy and smiling tonight…until I tried to feed her oatmeal again.  She screamed and shook her hands like she does after getting shots…so sad.  Needless to say, she is not liking this whole oatmeal thing.
