A really good run and a really good Apple.

Happy Friday! This has been one busy week and I am so glad the weekend is here. I am happy to report that Annabelle is behaving like an angel (well, mostly) and now asks for her cup instead of a bottle. She also falls asleep after crying for only a few minutes and sleeps all night. This makes for a happy baby in the morning. #winning

I don’t know if it was my pancake and chicken maple sausage breakfast or my new running tights, but today’s run felt great. I set out to do at least 6 and had to fight the cold wind the whole time, but I ended with 8.10 miles. My route was pretty hilly, so I was happy to get in a few miles in the low 8’s. It just felt good to run today.

After refueling with a sweet potato topped with black beans, cheese, and avocado, I had an apple (and this was a GOOD apple) with peanut butter. I’ve been eating almond butter lately and I must say, it was good to eat some old fashioned peanut butter.

I also spent some time listening to the Serial podcast. Have you guys heard of this? I read a number of other bloggers talk about it, so I decided to listen. I had no idea the story takes place right where I work.

The rest of the evening was spent taking selfies and eating pizza.

Now it’s time to watch Shark Tank and eat some cake and ice cream! We are still celebrating AB’s birthday. ūüôā

Stuffed French Toast with Sliced Bananas

Happy Sunday everyone! Even though I ate pizza and a pint of Ben and Jerry’s Half Baked last night, I still woke up hungry and ready for French toast. ūüôā


Stuffed French Toast

Ingredients (makes two servings)

4 slices of bread
2 eggs
1/4 teaspoon vanilla extract
1/4 teaspoon cinnamon
Filling (peanut butter, chocolate hazelnut spread, almond butter, cream cheese, etc.)

1. Spread the filling in between two slices of bread. I used chunky peanut butter and Justin’s chocolate hazelnut spread today.

2. Mix together eggs, splash of milk, vanilla, and cinnamon.

3. Dip sandwiches in the egg mixture and place on heated griddle pan. (Note: A panini maker also works great!)

4. Cook until golden brown on both sides.

5. Top with favorite toppings and enjoy!

I topped mine with sliced bananas and maple syrup.

A good run and baby shots break my heart

I know that many of you could not concentrate at work wondering if Chris ate the sub last night, so I apologize for making you wait so long.¬† The sub lives another day!¬† I have not removed it from the fridge yet, so anything could happen…

After enjoying a great night of¬†sleep (AB slept from 11-6:30…now I just have to learn to go to sleep when she does), I woke up and decided to brave the windy cold weather and head out for a run.¬†¬†I was starving, so I had a toasted english muffin with crunchy peanut¬†butter for breakfast.


I cannot wait for warm weather so that I can stop dressing like this to run outside.  I wore a Reebok cold gear sweatshirt and Reebok running tights.  The tights are made for the cold so they actually keep my legs pretty warm.

I had a great run!¬† I only did 4.25 miles but it was pretty challenging¬†because it was so windy.¬†¬†I felt pretty good the whole time and only got that weird cramp for a short amount of time and it wasn’t as severe as the other day.¬† My¬†pace is still¬†nowhere near where I used to be (it was about 9:40 per mile today), but I know I will get back to my¬†pace soon.

Annabelle’s¬†two month appointment was this afternoon.¬† She is growing so fast and is up to 11 pounds 7 ounces!¬† She gained 2 pounds 7 ounces this past month.¬† She is also very long…in the 80th percentile!¬† She was all smiles¬†until it was¬†time for the shots.


She had¬†1 oral medication and 2 shots today.¬† She actually liked the oral medication and drank it right down…girl likes anything that¬†seems like food.¬† She then got one shot in each of her legs.¬†¬†It is so heartbreaking to listen to her cry.¬† The “that hurt” cry is different than the hungry cry and I can’t help but tear up.¬† She settled down afterwards and she was passed¬†out almost all day.

While my dad was on baby duty, my mom and¬†I went to¬†Trader Joe’s.¬† I bought some¬†food for the week and some food for next week when my brother and his family come to stay with us :).¬† I can’t wait for them to meet Annabelle.


I also stopped at Giant to stock up on the Chobani flips.  The key lime flavor is my favorite and even Chris eats these voluntarily.
